Super easy Fourth of July American Flag Pie!

So Fourth of July is literally right around the corner, but if you’re anything like me you’re still trying to figure out what themed treat to make. Don’t worry, I’ve got your back! This Fourth of July American flag pie recipe is super easy, hard to mess up, and honestly one of my favorite pies ever. It is so absolutely delicious, it will make you want to celebrate Fourth of July all year round. This was my first time baking a strawberry pie with the strawberries in it and I was so delighted to find out that strawberries make the most delicious syrup when baked. Naturally, I spooned as much syrup as I could on my plate and it was magic.

It is especially delicioius when you pair the pie with ice cream and the ice cream melts all over your pie. My mouth is watering as I type. I might have to sneak a little slice right now.

But really, this pie is so very easy to make. I made my own crust, but it is just as good with a store bought crust and you’ll save a ton of time! Homemade pie crust is great, but the fact that it needs to rest 30 minutes in the fridge can be inconvenient if you’re in a time crunch. Plus no one will know! 😉 The filling only takes about 5 minutes to prep and another 3 minutes to cut out the stars and stripes and you’re ready to bake!Strawberry pie filling and blueberry pie filling for the fourth of July american flag pie

I also thought it would be nifty if I could maximize the crust, while still having a large design of the American flag on the pie. So instead of just adding stars and stripes, I cut out an actual flag shape on the top crust. Of course, this is optional, but I thought my fellow pie crust lovers would enjoy the extra crust.

Instructions
  1. Combine salt, sugar, and flour in a bowl. Cut the chilled butter into small chunks so that they are easily incorporated into the flour.

  2. If you are using a stand mixer, use the paddle attachment. If not, use a fork or your hands to mix the flour and butter together. It should have a chunky/sandy consistency when its ready.
  3. Combine the 6 tbsp of cold water with the vinegar, and slowly add it to the butter and flour mixture. The dough should look a little like this. Wrap the dough and let it rest in the fridge for about 30 minutes.
  4. Quarter the strawberries for the filling. Combine the sugar, brown sugar, cinnamon and nutmeg in a bowl. Add 2/3 of the mixture to the sliced strawberries, and the remaining 1/3 to the blueberries. Let the berries rest for 10 minutes.
  5. While the berries are resting, you can roll out your pie crust. Split the dough in half so that you have enough for the top and bottom crusts. The dough should be about 1/4 of an inch thick. Make sure you work on a floured surface. .
  6. Cut a rectangle out of the top crust. This is going to be your flag. From the left over dough, cut out a couple of strips and stars.
  7. With foil, create an L shape. This will serve as your divider when you put the berries into the pie. Put the crusts in the fridge while we finish the filling.
  8. Now that the berries have rested, pour out about half of the juice. Mix 4 tbsp of corn starch into the strawberries and 2 tbsp of corn starch into the blueberries.
  9. Now, you are ready to put the filling into the pie. Use the L shaped foil to separate the blueberries from the strawberries. Once both have been added, remove the foil and the berries should stay in place.
  10. Place the top crust and fold the edges to your liking. Place the stars and stripes in the rectangle for the flag. Tuck in the left over stripe dough under the top crust for a cleaner look.

  11. Brush the crust with egg wash and sprinkle sugar on top.
  12. Bake at 400 degrees for 45 minutes. Let cool and serve with your choice of ice cream!
