Easy and Delicious Breakfast Tater Tots

If you’re looking for the perfect breakfast or brunch recipe, look no further! These easy and delicious breakfast tater tots will make a great meal, whether you’re feeding yourself or a crowd. They’re surprisingly easy to make at home. All you really need is eggs, butter, 1 lemon, and tater tots! And yes, you can make your tater tots from scratch but how much easier is it to get a $2 pack at the store to feed the whole family?! A LOT easier.

When you really think about it, breakfast tater tots are still your classic eggs and potatoes breakfast. I’d say they’re actually a hybrid of hash browns and country fried potatoes. Like if, hash browns and country fried potatoes had a baby, they’d probably have tater tots. And you better believe I put a lot of thought into that. :p

Speaking of food and babies, I found something really cool when making this recipe.

This picture here, is a picture of two yolks (duh). These, however, are no ordinary yolks. These two yolks, came from the same egg. Thats right, 2 yolks from 1 egg! As I was cracking the egg open, I thought to myself “man thats a pretty big yolk!”. When I placed the yolk into the bowl, I took a closer look and lo and behold, there was two of em!

As you can imagine, I was really excited about this and immediately texted everyone a picture of my lucky find. I even contemplated buying a lottery ticket! Totally made my day.

Anyway, you absolutely need to try these breakfast tater tots! You probably already have most of the ingredients in your fridge. You can even add some bacon or ham and it’ll pair so well with the hollandaise sauce. Maybe top it with some avocado? Some tabasco sauce? Cheese even! The options are endless. These tots are totally customizable and thats the best part.

Instructions
  1. Cook your tater tots according to the packaging instructions. While they cook, prepare the hollandaise sauce and toppings.
  2. To prepare the hollandaise sauce, first whisk together the 3 egg yolks, water, and lemon juice.

  3. Put in a sauce pan and turn the heat on low. Whisk constantly until the sauce reaches a thick consistently and turns pale. The sauce should be thick enough that when you run the whisk through you can see pan bottom for a second or two.
  4. Remove from heat and begin spooning in the softened butter. Whisk in the butter until it reaches the thickness that you prefer. (I only used about half of the 2/3 cup of butter, but I like my sauce runny)

  5. Once the tater tots are done cooking, top them with the hollandaise sauce, eggs, bacon, avocado or any other toppings you choose to add.

Recipe Notes

*Tip* if your hollandaise sauce happens to curdle, do not worry! All you need to do is place the sauce back into the pan, turn the heat on low and whisk in one more egg yolk. Your sauce should return to a creamy consistency once again 🙂
