I usually turn into a cookie maniac around the fall. The weather cools and hanging out around a hot oven suddenly sounds so nice and cozy. So while hot ovens are more fun in cold weather, cookies are yummy all year round. Don’t you agree?! And I promise you, these quick and easy peanut butter blossoms are totally worth the heat. I am absolutely addicted to these cookies and need my fix on a regular basis . Usually I just bake a big batch and freeze half to keep the cookies fresh. Then I just defrost the cookies when I want more! I’ll let the cookies defrost at room temp for about 3 hours before I try to eat them. I also love to pop them in the microwave for about 8-10 seconds so that the chocolate kiss in the middle gets all melty. Yum!
This is the only peanut butter blossom recipe I’ve ever used. Ive done some minor tweaking to it to get the perfect mix of soft, chewy and crumbly and I think I did a pretty good job! Once I perfected that, I never felt the need to try another variation of peanut butter blossoms. This recipe is just that good 🙂
What’s also awesome about these cookies is that they’re so easy to make. Baking can get so technical, and although I love it, sometimes you’re in a time crunch and you need something quick. This recipe takes maybe 5 minutes to prep with a stand mixer and maybe an extra 2-3 minutes by hand. It follows the most basic cookie dough steps: cream the butters and sugars, add the flour! You couldn’t mess up this cookie dough if you wanted! Which also means its great if you’re baking with little ones that are eager to help.
